OYSTER SPECIES.
There are over 150 varieties of oysters harvested and sold in North America, yet they comprise a total of only 5 species of oysters. And although each species does have its general characteristics in regards to flavor, their “finishing touches” can be attributed more to their merroir (local habitat) than to their species. In this sense, oysters are much like fine wine…each one is distinctly different from each other as they take on the flavors indigenous to the regions and conditions under which they were grown.
FLORIDA SEAFOOD SPECIES.
Florida ranks among the top 12 U.S. states for fresh seafood production. Florida fishermen catch more than 84 percent of the nation's supply of grouper, pompano, mullet, stone crab, pink shrimp, spiny lobsters and Spanish mackerel. More than 900 saltwater species have been recorded offshore the 1350 miles of state coastline.
USA/CANADA SEAFOOD SPECIES.
About 9.5 billion pounds of edible seafood products with a dockside value of $5.4 billion were landed in the U.S. in 2017. The majority (over 80%) of this catch is finfish and the rest is shellfish. The leading species landed by U.S. commercial fishermen in 2017 in descending order includes: Alaska pollock, menhaden, tuna, cod, and salmon. Alaska led all states in volume of landings in 2017 with over 60% of the total catch; followed by the Gulf of Mexico 14%, Atlantic 13%, and Pacific regions at 12%.
